Apple Chips

How did I make it to adulthood without ever having these sweet, crunchy treats?!



Thinly sliced apples sprinkled with cinnamon and baked until crisp. So simple and so tasty!



Apple Chips

You will need:
Apples (Two apples makes about 30 chips and fills one cookie sheet)
Lemon juice (The juice of one lemon with be enough for 3-4 apples)
Cinnamon
1 cup sugar
1 cup water

In a small pan combine water and sugar and heat until sugar has dissolved. Remove from heat and allow to cool.
Juice lemon into small bowl.
Core apples and slice thinly. I used a meat slicer set on 3 1/2 which is about 1/8" thick but you can use a mandolin slicer or sharp knife.
Toss apples with lemon juice until each slice is coated.
Use tongs to remove them, allowing excess juice to drip, and place them into your sugar mixture. Let sit for 5 minutes.
Remove one at a time, allowing excess to drip, and place in a single layer on a baking sheet lined with aluminum foil.
Sprinkle lightly with cinnamon and place in oven set at 200.
Bake for 45 minutes and flip them over to allow both sides to crisp.
Return to the oven and continue baking until crisp, 1-2 hours.
Remove from cookie sheet and allow to cool.
Store in an air tight container.


These take a little time to make because they need to cook slowly at a low temperature to dry out and crisp up but they're worth the wait. An added benefit is how amazing your house smells as they cook!


Tips: I stack four cookie sheets into my oven to make larger batches, the trick is not letting them overlap too much so they dry out instead of steam.
To check to see if they're done take one out and allow it to cool. Once cool snap it in half, if it breaks cleanly they're done. (It will feel soft and be flexible even after they're done as long as they're hot.)
The simple syrup you make with the sugar and water is enough for multiple batches and can be stored in the fridge for later use.
